I Might Turn Into a Protein Bar
I eat the same breakfast every single morning and have for at least 2 years now. Peanut butter, chocolate chip protein bars and coffee with unsweetened coconut milk as creamer.
I do this because:
- I LOVE them.
- They’re easy.
- I like routine.
- It’s one less thing I have to think about.
- Other stuff
Back when I first started getting into healthy/easy food, I quickly fell in love with protein bars. Only, they were packed with sugar and kind of expensive. I started looking for some easy, homemade Pinspiration and came across a recipe that was simple enough that I have since made my own.
Healthy Please, Hold the Effort
My diet is simply “conscious”. It has no formal name or boxed definition. I experiment with what I eat and take close notes on what makes me feel good, what makes me feel bad, what makes me crash, hyped, sick etc.
In doing this, I’ve found that my body definitely doesn’t thrive on gluten, dairy or sugar. So as someone who was raised on cereal, easy cheese and sandwiches, this was a hard transition for me. Especially since I detest cooking. It is literally the last thing I ever want to do with my time. I don’t have the patience for it, I burn most things and it instantly throws my mood out and my attitude up. This makes my desire to eat healthy more difficult than it has to be. Nothing I cook takes longer than 30 minutes and if I can avoid it all together you better bet I will. (Most of the time I would honestly rather not eat at all haha).
That’s why I love these mouth wateringly delicious, peanut butter, chocolate chip, gluten free protein bars. I spend 30 minutes every week and a half or so making them, stick them in the fridge and eat them for breakfast every single day. Ta da! One meal I never have to think about.
Gluten Free Protein Bars Recipe:
1/2 C oatmeal
1 &1/2 C ground oatmeal
1/2 C granola
1/2 C coconut flakes (I use unsweetened organic)
1/2 C chocolate protein powder
1/2 C Chocolate chips (i use dark chocolate)
1/4 C chia seeds
1/4 C flax seeds
1 C all natural peanut butter
1 C unsweetened Coconut milk
1/4 C honey (optional)
mix until well blended
- Add wet ingredients to dry, mix well.
- Press out into rectangled container lined with wax paper
- Wrap in wax paper and let sit in the fridge over night.
- In the morning, cut bars into desired lengths with pizza cutter. ENJOY!
Total time: 15 minutes
I make 2 batches at a time which lasts me about a week and a half. They’re a great healthy, energizing breakfast that keeps me full until lunch without feeling gross. And they go GREAT with coffee! They’re super simple to make and I’ve NEVER had someone try them and not love them.
With a small bit of tweaking, they could also very easily be made vegan.
